If you haven't tried quinoa yet, you should! This recipe is great as a main dish for lunch, or as a side dish with grilled chicken breast or any type of fish. You could also punch it up with some fresh grated garlic...I like to use a micro-plane grater for that- it grates garlic very finely, and then you could add it right to the dressing mixture and stir it in... 1/2 clove ought to do it for this recipe. I used red quinoa here, but you can use any kind. 
Mmm... This one is so refreshing! 

2/3 cup uncooked quinoa
1 tsp sea salt
1 can black beans, drained and rinsed
1 large tomato, chopped
1 red, orange or yellow bell pepper, chopped
1/2 cup chopped red onion
1 cup chopped fresh spinach

1/4 - 1/2 cup chopped fresh cilantro
2 Tbs fresh squeezed lime juice
2 Tbs extra virgin olive oil
1 tsp cumin
1/2 tsp sea salt
1/2 tsp pepper

1. Some people like to rinse their quinoa before cooking- sometimes I do, sometimes I don't. This is best done with a mesh strainer or else one with very small holes. Bring 1 1/3 cups of water to a boil. Add in quinoa and one teaspoon salt. Bring back to a boil, then reduce heat to low and simmer for 15 minutes. Make sure there is no water left in the bottom of the pot when it is done...if there is, pour the quinoa through a strainer. Set aside and let the quinoa cool for at least 15 minutes. 

2. In a large bowl combine lime juice, olive oil, cumin, salt and pepper and whisk to combine. 

3. To the bowl with the dressing, add the beans, chopped veggies, and cilantro. When the quinoa has cooled slightly (I like it to cool about 15 minutes) add it to the bowl also. Use a spatula to fold all the ingredients together until well combined. 
Serve warm, cold, or room temperature. Enjoy!

If you are wondering if you should see Dr. Schmidt or try the holistic approach for your health issues, I would strongly advise you to give her a call and set-up an appointment. I am so glad I did! Please read my story below.

I was at my wits-end with conventional doctors giving me the shrug off and telling me I was getting old, I was age 25 when that happened, or “oh it’s just arthritis and there is nothing we can do for you”, “just go home and get more sleep”, “you are to active with sports that is why your knees are shot, so just take Vicadine the rest of your life to deal with the pain”, “you are depressed and must be put on Prozac right away.” This truly did happen to me. I never once felt like the so-called “doctors” looked at me as a human being that needed an interpretation of what my body was telling me. Twenty years of pain, suffering, and just learning to live with all my issues has given me a bad attitude toward our conventional health care system.

I knew deep down inside that there was something wrong with me, so I searched the web for holistic/alternative health care facilities in my area. This is where Dr. Schmidt comes in. I remember very vividly the first conversation that I encountered with her. At this point I was feed-up with any doctor, but still had a ray of hope. I called Dr. Schmidt’s office and her voice was very different compared to all the other doctors that I had seen. She listened very intensely as I described some of the major health issues that I was having. Her voice had confidence that made me continue on to ask questions. She replied to all my questions with caring educational answers that made sense to someone like me. At the end of our phone conference I felt so relieved and just knew that I better make an appointment with her.

At the first evaluation appointment I still had my doubts. However, by the end of the appointment I was so impressed with Dr. Schmidt that I once again was reassured that I was on the right track. She made me feel like I was a human being to her not just another crazed women trying to escape from the “white coats”.

I did everything Dr. Schmidt recommended for me to do, and within a month I was feeling better. Within a month and a half I was well enough to take the two-week vacation my boyfriend had planed for me. I still had health issues, but there was no way I would have gone on the vacation if I hadn’t gone to see Dr. Schmidt.

The best thing I love about Dr. Schmidt is that she is very honest. In a very caring way she will tell you like it is no matter if you like it or not. Such as, she told me up front that this type of health care is not a quick fix and it will take some work on my part to recover. Every health issue I had she had a solution. She also was very accommodating to calling or emailing her with any questions that I may have until the next appointment. She would give out recipes to help keep me on the strict diet that was required for me.

I can’t say enough about Dr. Schmidt. If it weren’t for her kind and caring health care domineer I would still be a very sick human being. By the way, it’s been almost a year and I feel super! Better then I have felt in years. Thanks Dr. Schmidt!
